Pumpkin Chocolate Chip Cookies
When I was in high school, I used to ride the bus to my dad's tractor dealership to work for a couple hours as my job. There was the sweetest old man who was also my neighbor that worked behind the parts counter that would bring me a soda pop and a pumpkin chocolate chip cookie as soon as I sat down at my dad's desk to start working. Whenever I eat one of these cookies, it reminds me of him. This version is from chelsea's messy apron and is packed full of spice and has a slightly chewier texture than the cakey kind they have in the bakery. We weren't super strict about chilling them in the fridge like the recipe says. We chilled them for about 30 minutes, then scooped them and baked them.
