Lemon Tuna Pasta
I saw this on bon appetite today and knew immediately what we were having for dinner. This is a cheap, quick, easy meal that tastes great. I love the saltiness of the tuna and capers and the brightness of the lemon and a sprinkling of parsley fresh from the garden.
Lemon Tuna Pasta
1 lb linguine
2 cans olive oil packed tuna ( I used 5 oz cans of Genova Tuna) drained
2 cloves minced garlic
4 T lemon juice and zest of 2 lemons
4 T capers
1/2 c olive oil
2-4 T parsley
salt and pepper to taste
- Combine tuna, garlic, lemon, capers, and olive oil in a heat proof bowl.
- Set bowl over pan while you cook linguine in salted water.
- When the pasta is cooked, drain and combine with ingredients in bowl. Season with salt and pepper and chopped parsley.
