Pavlova
4 large egg whites
1 tsp vanilla
1/2 tsp cream of tartar
Beat in a large bowl on Medium Speed until soft peaks form. Very gradually add 1 T at a time of 1 C superfine sugar. Beat until it holds very stiff peaks. Line a cookie sheet with parchment and spread in an even layer. It should not fill the whole cookie sheet unless you double the recipe.
Bake at 275 for 1 hour.
Topped with whipped cream and your choice of fruit.
