Fruit Pizza
I made these the other day for some scouts who came over to ride horses. I made the shortbread recipe that is on here and this cream cheese frosting recipe:
8 oz cream cheese, softened
5 T unsalted butter, softened
1 T sour cream
1/2 teaspoon vanilla
1 1/4 C powdered sugar.
Process the cream cheese, butter, sour cream and vanilla in a food processor until combined, about 5 seconds. Add the powdered sugar and process until smooth, about 10 sec, scraping the sides.
The difference between the top recipe and Nate's mom's version is hers is softer with a topping that's less like frosting and more fluffy.
Nate said he likes his mom's better, so here is her version:
dough:
1/2 C butter or margarine
1 egg
2 C sugar
2 T milk
2 C flour
1/2 t baking soda
1t baking powder
1/4 t salt
Mix butter, sugar, egg, milk, then add the dry mix. Then spray or grease a half cookie sheet, roll dough out on sheet. Bake at 400 degrees for 8-10 minutes. No longer than 10! Dough might not look done, but it will after it cools.
Frosting:
2 8 oz packages cream cheese
2 C sour cream
1/2 t vanilla
1/2 C sugar
1/4 C powdered sugar
Mix in food processor until smooth
Toppings: Strawberries, bananas, kiwis, raspberries, blueberries, watermelon, cantaloupe, honeydew, grapes.
