Sugar Eggs
Makes about 4 eggs
5 lb sugar
2 egg whites
food coloring
large egg mold
Mix sugar and egg whites. Add food coloring if desired. I usually take the mold and pack it and put it in a separate bowl to color. That way you can do a few different colors if you like. After you have packed the sugar mixture tightly into the mold, swiftly turn it upside down onto a baking sheet. Bake for 20 min at 200 degrees.
CAREFULLY! scoop out the inside with a spoon. I usually saw off the front with my bread knife and then scoop out the inside. You can start scooping about halfway from the back so you can see the scene better rather than scooping out the entire inside. Place candy and easter grass inside and then hot glue the top on. Decorate with royal icing.
Royal Icing:
Makes about 2 1/2 C frosting
3 T Meringue Powder
4 C Powdered Sugar
5 T water
Mix until stiff peaks form, about 7 min. I had to add more water. Color as desired.
