Buttermilk Pancakes
We love to make these fluffy, buttery pancakes when we have buttermilk in the fridge.

Grandma's Pancakes
Yield: 8 medium sized pancakes
1 egg
1 1/4 C Buttermilk
1 T veg oil
1 1/4 C flour
1 T sugar
1 t baking powder
1 t baking soda
1/2 t salt
butter for frying
Preheat griddle on medium.
In a medium-sized bowl, using a fork or whisk, mix together flour, sugar, baking powder, baking soda, and salt.
In a 2 cup measuring cup, beat the egg with the buttermilk and veg oil.
Make a well in the dry ingredients and pour in the wet ingredients. Stir gently until just blended (the batter will be lumpy)
Heat a pan and add a little butter or spray with cooking spray if you want a more even brown.
When the butter sizzles, pour a 1/4 c batter onto the griddle.
When the top of the pancake is bubbly, flip it! Fry the other side until the pancake is cooked all the way through (a minute or so)
Serve immediately with your favorite toppings.
